The Edible Schoolyard, in collaboration with Martin Luther King Junior Middle School, provides urban public school students with a one-acre organic garden and a kitchen classroom. Using food systems as a unifying concept, students learn how to grow, harvest, and prepare nutritious seasonal produce. Experiences in the kitchen and garden foster a better understanding of how the natural world sustains us, and promote the environmental and social well being of our school community.
It's been said that we eat with our eyes before we take our first bite. A plate filled with colorful fruits and vegetables is not only a sight to behold, but research is continuing to show that colorful produce can help keep our hearts, minds and, yes, even our eyes healthy.
EcoLiteracy - Rethinking School Lunch

The Rethinking School Lunch (RSL) program uses a systems approach to address the crisis in childhood obesity, provide nutrition education, and teach ecological knowledge. CEL spent five years researching the 10 interrelated dimensions below, which are vital to achieving this vision:
Environment David DeRothschild - Adventure Ecology www.adventureecology.com De Rothschild's Mission 1 has a well-presented, standard expedition Web site, but he's also launched a site called Mission Control, and it's here that his Internet strategy gets more energetic. (Both can be accessed at www.adventureecology.com.) It's a gateway for kids (the target age range is nine to 12) to learn about global environmental problems and the issues surrounding the fragile terrain de Rothschild is exploring. Mission Control also provides a place to blog, chat with other Adventure Ecology Club members around the globe, or play a few enviro-branded video games, like racing alternative-fuel snowmobiles across the tundra while dodging polar bears.
